Strawberry Pie Filling Recipe Preserved in Water Bath Canner
Never buy strawberry pie filling again with after making this easy pie filling recipe made for water bath canning. It is sweet, yummy, and goes amazing with a basic buttery pie crust.
This is also a very economical option to the store bought version, especially if you grow your own strawberries. My homemade version costs about $1.87 per quart or 32 oz. making it about $0.06 per ounce. The store bought brand I had found at Wal-Mart not too long ago costs $3.48 for 21 oz. or about $0.17 per ounce.

Strawberry Pie Filling
Ingredients
- 16 cups strawberries, sliced, 4 lbs…[$12.00]
- 3½ cups white granulated sugar, …[$1.02]
- 1¼ cup Clear Jel, …[$1.71]
- 4 cups water, …[$0]
- 4½ Tbsp. lemon juice, …[$0.18]
Instructions
- Prep all your water bath canning, mason jars, lids and rings accordingly.
- Slice strawberries and set aside.
- In a large stock pot, combine sugar, Clear Jel, water, and lemon juice. Bring mixture to a boil while stirring often. I like having it on medium heat so to not scorch the mixture.
- Stir or fold in sliced strawberries once stock pot mixture comes to a boil and mixture is thickened. Remember once processed and cooled, the filling will be thickened even further.
- Reduce to low heat and spoon into sterile mason jars. Leave 1½ inch headspace.
- Process in water bath canning for 30 minutes.
