Oh, man! Oh, man! The best turkey salad recipe has to be my apple bacon turkey salad. It is packed full of flavor. Starting at the delicious leftover turkey to the salty bacon pieces then leading to the crisp and sweet apple bites, and then finishing off with creamy and subtle mayo and sour cream base that keeps it all together.
The whole family just devoured these sandwiches up. I made them for dinner with a side of french fries and corn on the cob. They would also go wonderfully with leftovers of traditional Thanksgiving sides like sweet potato casserole, the classic squash casserole, or my ultimate favorite onion potato casserole.
It is always a win when I can come up with a perfect family recipe that uses up leftovers. Leftovers from a roast turkey or chicken work the best. Yes, a well made roasted chicken and leftover would also work fantastically well in this recipe.
You can also make this a gluten–free recipe if you negate the sandwich bread. Spooning the salad mixture on top of lettuce is a great healthy and unique option for a fast lunch at work or school.

This is a great lunchtime or light dinner recipe that uses “free” roasted turkey leftovers. My apple bacon turkey sandwiches are already relatively cheap at about $1.36 per sandwich. You can make things even less expensive if you grow all the herbs and spices, apples, and preserve your own sweet pickle cucumber relish.

In a medium pan, saute bacon for about 2 minutes over medium heat. Add onions and cook until onions are translucent and bacon’s fat is rendered. Add mushrooms and seasonings and cook for another 1-2 minutes.
Remove from heat and place in mixing bowl to let cool off. Meanwhile, chop up turkey and apple then add to mixing bowl.
Mix in the remaining ingredients, cover bowl and place in refrigerator for 2-3 hours for flavors to come together.
