Bacon Cheeseburger Zucchini Boats Recipe
My bacon cheeseburger zucchini boats are perfect for an easy and fast dinner meal for the whole family. They are great for the use of some larger zucchinis that have grown in your backyard garden. And they have a healthier perspective than its counterpart, the real bacon cheeseburger on a carb
Now, I am not bad-mouthing the delicious classic bacon cheeseburger. It, like everything else, has a place. I just started really getting serious about losing the last 15 pounds of baby weight. So, I have been coming up with ways to incorporate my favorite meal items into healthier and less carb-filled entrees.
The bacon cheeseburger zucchini boat is delicious and quite filling. I like to use the zucchinis that have gotten a bit too big in the garden. They make great size boats since you will scoop out a portion of the inside and seeds. The entire family thought it tasted just like a bacon cheeseburger, just deconstructed.
I am excited to try some other classic burger flavors, like sautéed onion and mushroom Swiss burger or maybe a western burger with Monterrey Jack cheese, BBQ sauces, and fried onions. Oh, those sound fantastic. What are your favorite burger styles you would try on a zucchini boat?

For a filling entree at $2.88 per serving, this isn’t a bad price. Unfortunately, the bulk of the cost comes from all the meats, ground beef, and bacon. I can reduce our price slightly by growing all our veggies. My homestead price for this recipe comes close to $2.43 per serving. It’s not much, but it is something.

Bacon Cheeseburger Zucchini Boats
Ingredients
- 2 medium zucchinis …[$1.00]
- 4 slices bacon chopped…[$3.00]
- ½ small onion …[$0.25]
- 1 lb ground beef …[$4.00]
- 1 tbsp. Worcestershire sauce …[$0.15]
- 1 tbsp. garlic powder …[$0.16]
- 4 tbsp. ketchup …[$0.40]
- 1 tbsp. prepared mustard …[$0.12]
- 2 tbsp. heavy cream …[$0.18]
- 2 cups cheddar cheese shredded…[$2.00]
- ½ large tomato chopped…[$0.25]
Instructions
- Cut zucchini in half lengthwise and spoon out all the seeds. Arrange in a casserole dish and bake for 10 minutes or until zucchini is soft at 350 °F.
- While baking, cook chopped bacon in a skillet for 5 minutes then add the ground beef, Worcestershire sauce, and garlic powder. Cook until all the meat is brown.
- Add ketchup, mustard, and heavy cream.
- Take out zucchini from oven and fill it with the meat mixture. Then top with shredded cheddar cheese. Place back in oven and bake until cheese has melted. Top with tomatoes and enjoy.
