Blackout Pound Cake Recipe
My blackout pound cake is one of those cakes you have to make. It isn’t just made with cocoa powder but with a special Black Cocoa. I was only able to find black cocoa on Amazon. This cocoa powder is not only much darker the regular cocoa powder but has a richer and deeper cocoa taste. Black cocoa powder can go a long way with just a little.
I had made this pound cake with a black cocoa icing as well. It would also look and taste great with white icing. The contrast of colored icing would bring out the dark color of the pound cake.
The entire family loved this cake. I caught my husband, who is not a chocolate fan, cutting into this cake and devouring a whole lot of slices. Of course, the other chocolate loving members of this family, including me, ate this cake up in a matter of a couple of days. My kids realized ice cream goes amazing with this cake as well.
Cost to make recipe.
I have to admit for a pound cake, this blackout version is on the more expensive side. Of course, the butter and eggs take a large portion of the cost but now the Black Cocoa is even more expensive. I have calculated this entire cake to cost around $13.31 or $0.83 per serving slice. I can’t reduce it too much except for raising my eggs and making my vanilla extract.

Blackout Icing

Instructions
Blackout Cake
- Preheat oven to 350 °F and grease angel food or Bundt pan.
- Cream white and brown sugar and 2 sticks butter together until smooth. Add in 6 eggs and extracts then blend remaining cake ingredients until smooth.
- Pour cake batter into greased pan and bake in oven for 50-60 minutes or until toothpick comes out clean. Set out cake on wire rack to cool.
Blackout Icing
- Whip together all ingredients in a bowl and pour icing over cool cake. Eat and enjoy.
