Braised Pork Medallions over Homemade Apple Pie Pierogis Recipe
Do you make your homemade pierogis? How about braised pork medallions over apple pie pierogis? I am part Polish and have recently cooked and baked ancestral recipes. Pierogis are a traditional staple in a typical Polish household. I can remember my great-grandmother whipping up vast batches of potato and onion pierogis in the kitchen. I have recently done the same thing.
The same potato and onion flavor has been made by me, but also so unique varieties, too. I have made put in a pumpkin puree filling which has given way to one-of-a-kind dinners. Pumpkin pierogis are great with a spicy-sweet potato sauce or an apple bacon cream sauce. How about trying them alongside a fresh walnut cream sauce?
Alongside the pumpkin, I had filled the dough with my homemade canned apple pie filling. They were requested from the husband because he loves apple pie and thought they would make great and easy hand pies. I had a lot of them on hand and wanted to have them for more than just desserts or snacks. Oh, and if you don’t want to make your apple pie filling, then you can use the store-bought version.
My braised pork tenderloins over apple pie pierogis give a salty and savory twist alongside the sweet cinnamon and apple pierogis. It is an excellent flavor combination and is a perfect meal for the entire family.

When I calculated this recipe, it came to about $17.20 for the entire entrée with special apple pie pierogis. The meats and pierogis make up the bulk of the price of this recipe. There isn’t too much I can do or make to reduce the cost of this recipe.

Braised Pork Medallions over Apple Pie Pierogis
Ingredients
- 2 pounds pork tenderloin …[$5.00]
- 2 tbsp. garlic powder …[$0.32]
- 1 tbsp. black pepper …[$2.79]
- 4 slices bacon chopped…[$3.00]
- ½ large onion …[$0.25]
- 1 cup mushrooms sliced…[$1.50]
- 2 Tbsp. butter optional…[$0.25]
- ¼ cup chicken stock …[$0.09]
- 15-20 whole apple pie pierogis frozen…[$2.00]
- 4 cups green beans …[$2.00]
Instructions
- Cut up the pork tenderloin into slices about one inch thick. Sprinkle garlic powder and black pepper over all the slices of pork. Set the pork aside until later.
- In a large skillet, sauté onions and bacon together over medium heat. Cook until bacon has cooked thoroughly. Remove from pan and set aside on a separate plate or bowl.
- Add the butter if there is no bacon grease left in the pan. Increase the heat to medium to high and sear all the sliced pork tenderloin until brown on both sides.
- Pour in chicken stock to skillet. Top the pork with onion bacon mixture and sliced mushrooms. Cover the skillet and reduce the temperature to low to medium heat. Cook for about 20-30 minutes.
- While the pork braises, boil the water and cook homemade apple pie pierogis.
- Plate your cooked pierogis with sliced pork and sautéed bacon mushroom onion mixture on top.
