Butterkase Mac & Cheese Recipe with German Sauerbraten

As far a mac & cheese recipes go, this butterkase mac & cheese is by far one of the best. First, the German Butterkase cheese is amazing as a macaroni and cheese dish. This cheese is mild and has a soft texture like mozzarella. It also is creamy and has a major butter component of taste. There is no overpowering flavor that will mask the fruit or vegetables that you can pair it.
The second part of this recipe is the Sauerbraten. I made this recipe with leftovers from my German mildly sour slow-cooked pot roast. Typically, a three to four-pound beef roast leaves lots of leftovers for the next day. My butterkase mac & cheese use up a good portion of those leftovers by also changing it up so it doesn’t taste like leftovers.
To make the sauerbraten stand out in this recipe, be sure to add the sour like gravy and slow-cooked onions and/or carrots. When I made this recipe and took the picture, I didn’t have any leftover carrots; thus I had to add a few extra. You can omit the carrots. And substitute a different veggie like broccoli or chopped Brussel sprouts.
Cost to make this recipe.
I will admit, for a leftover recipe, this one is a bit on the expensive side. I have calculated this recipe to cost about $11.57 for the entire dish, or $1.93 per serving. The cost of the sauerbraten is a little hard to come up with, so I designated about $3.00.
The butterkase cheese is the most expensive ingredient in this recipe. But ever so worth it. The remaining ingredients are not too bad. Unfortunately, there is no real good way to make this recipe “homestead cheap.” Besides the carrots, I don’t grow or make any other component.

Butterkase Mac and Cheese with German Sauerbraten
Ingredients
- 3 cups sauerbraten cooked leftovers…[$3.00]
- 1 lb pasta …[$1.00]
- ½ stick butter divided…[$0.50]
- 3 large carrots …[$0.30]
- 3 tbsp flour …[$0.04]
- 1¼ cup milk …[$0.29]
- 1¼ cup heavy cream …[$1.44]
- 8 oz butterkase cheese cubed…[$5.00]
Instructions
- Cut up or shred leftover sauerbraten. Warm up in either a microwave or put into a low temp oven. Cook pasta accordingly, drain, and set aside.
- In a large pot, saute chopped carrots in one tablespoon of butter. Cook for about 10 minutes or until carrots are soft and tender but not mushy. Take carrots out and set aside until later.
- Melt remaining butter in pot that carrots were cooked in. Whisk in flour, stir and cook until all lumps of flour are out.
- Pour in both milk and heavy cream. Whisk together and cook over medium heat until mixture thickens. Add in all the butterkase cheese and let melt.
- In a large stockpot or bowl, fold in cooked pasta, cooked carrots, and cheese sauce. Serve with pasta and topped warm sauerbraten.
