My girls always request pancakes, especially on the weekends when we have more time for a full hot breakfast. Monday through Friday becomes to chaotic when I am trying to get ready plus my daughters fed, dressed, teeth brushed, hair done, and beds made all before school. There is only time for a fast bowl of cereal, fruit, or something nuked like oatmeal.
One day I had been walking down the frozen foods aisle when something caught my little girls eye. They were some brand of frozen breakfast foods. I never buy these items because I can make them for much less cost at home. But seeing them did give me the ideas to freeze them for later use. Now my girls could have their favorite breakfast food seven days a week if they wanted.
How to properly freeze pancakes.
Freezing pancakes is an easy process. All you have to do is make up your pancakes fresh. I like to make a large batch when I do cook them for breakfast. That way I will have plenty of
Once the pancakes are cooked through and not eaten, place them on a wire rack. Every pancake needs to be completely cooled. Next, place them on a baking sheet and into the freezer. Let them freeze for a couple of hours. Finally, take each frozen pancake and put them in a freezer
Now all you need to do is take as many as you need out and microwave them

Our cost to make these great pancakes are about $4.45 or $0.12 per pancake. As a homesteader, eggs are about the only ingredient that we raise here. They may lower our cost slightly but that would be the only ingredient. These pancakes are pretty cheap as it is, I am not sure how else to reduce it.

Buttermilk Pancakes
Ingredients

Instructions
- Whip together eggs, buttermilk and white sugar. Add in baking soda, baking powder, and salt. Blend together all purpose flour one cup at a time until mixture is smooth.
- Heat up a large flat skillet on low to medium heat. Grease skillet with either butter or pan spray. Using a small ice cream scoop, pour batter on skillet and heat up on low heat until the top of pancakes start to bubble. Flip cakes and cook for another 30-60 seconds.
- Take off heat and either eat fresh and hot or store for later. If you want to store then place pancakes on cooling wire rack for 15 minutes or until completely cold. Place cold pancakes on a baking sheet and put into freezer. When cakes are frozen, put into a freezer bag and store until ready to use.
- Take cakes out of freezer and microwave for 30-60 seconds on high when you are ready to eat.
