Cajun Sausage Dumplings Recipe
This Cajun Sausage and Dumplings recipe was inspired by my Turkey Vegetable and Dumpling slow cooker recipe. These two recipes are both made in a slow cooker, which makes it super simple to prepare, set, and forget. Likewise, both are also cooked in a roux base made with a delicious butter and flour mixture. The roux will thicken as the dish cooks for 6 hours to make a perfect stew base.
And then, of course, you have the dumplings. These dumplings are both basic wet biscuit dough dropped into the slow cooker raw and simmered in the cooking liquid. One thing to understand is the wet dumpling dough will sink to the bottom of the slow cooker. Then, it will rise to the top as it cooks and become a dumpling blanket to the stew.
However, these two recipes are different in protein sources, vegetables, and spices. I have added a nice array of Cajun sausage pieces, bell peppers, and my homemade Cajun spice blend. The basic dumplings complement the spicy style of this slow cooker meal.
And finally, I absolutely love this recipe as a leftover recipe. This recipe can use between 2 to 3 cups of leftover pulled pork from any recipe you previously made.
Cost to make this recipe.
I added up my cost to make this recipe. And it came out to be about $13.86 for the entire slow cooker, or $2.31 per serving size. That isn’t a bad price to feed a hungry family.
This recipe cost can be reduced by growing your own vegetables. We as homesteaders grow the bell peppers, onion, celery, garlic, and make up your own Cajun spice blends and chicken stock. Your price could very well be as low as $8.69 or $1.45 per serving size.

Ingredients
Cajun Sausage Stew
- 1 stick butter …[$1.00]

- 8 cups chicken stock divided…[$2.80]
- 1 pkg Andouille sausage diced…[$3.50]
- 1 large green bell pepper diced…[$0.50]
- 1 large red bell pepper …[$0.50]

- 2 stalks celery diced…[$0.57]
- 3 cups cooked pulled pork leftovers…[$2.00]
- 3 cloves garlic minced…[$0.30]
- 2 Tbsp Cajun seasoning …[$0.66]
Dumplings
- 1 cup all purpose flour …[$0.23]
- 1 tsp baking powder …[$0.04]
- 1 tsp salt …[$0.07]
- ½ stick butter cubed and cold…[$0.50]
- 1 large egg …[$0.23]
- 1 cup milk …[$0.23]
Instructions
- For dumplings, combine flour, baking powder, salt and cold butter in a medium bowl. Cut butter into flour mixture.
- Blend egg and milk to make a paste. Set aside mixture until later.
- In a saucepot, melt butter and then stir in flour to make a roux over low heat. When you make a thick paste, stir in 1 cup of chicken stock and keep warm.
- In a large slow cooker combine remaining chicken stock and other ingredients for the stew. Pour in warm roux sauce and stir everything in a slow cooker.
- Drop in spoonfuls of dumpling dough into slow cooker. Dough will sink at first but rise to top as it cooks. Set to low and cook for 6 hours.
