Caramelized Pineapple and Chicken Quesadillas Recipe with Strawberry Pie Salsa
I have made tons of chicken quesadillas over the last 10 years. It can be a bit boring so in the past I have tried to spicy things up with different fillings but this time I went in a different direction with a quesadilla topping. Now you can go the route of fresh strawberry salsa, but what if you are making these outside of strawberry season?
Well, grab a jar of strawberry pie filling as a substitute. This past spring, I had canned my first batch of Strawberry Pie Filling which turned out amazing. So I decided to use it for the topping. I was a little afraid it would be too sweet because of all the sugar put in the pie filling. But too my great surprise it was not. The jalapenos and onions definitely help to counteract the sugar and gives the strawberries a nice balance of spicy and sweet.
This recipe was a family favorite and I was extra happy because I found another recipe for my strawberry pie filling other than the typical strawberry pie.

Caramelized Pineapple Chicken Quesadillas with Strawberry Pie Salsa
Ingredients
Spicy Strawberry Salsa
- 1 cup strawberry pie filling, …[$2.88]
- 2 tbsp. jalapenos, chopped…[$0.16]
- 2 tbsp. onion, chopped…[$0.10]
- few pinches fresh cilantro, …[$0.10]
Quesadillas
- 1 large chicken breast, cubed small…[$1.00]
- 2 tbsp. butter, …[$0.25]
- 1 small onion, minced…[$0.50]
- 1 can pineapple, cubed small…[$1.48]
- 4 large flour tortillas, …[$0.72]
- 2 cups Monterey Jack cheese, shredded…[$2.50]
Instructions
Spicy Strawberry Salsa
- Combine all ingredients, except cilantro, in small bowl. Cover and refrigerate for at least 4 hours.
- Serve on top of baked quesadillas.
Quesadillas
- Brown chicken in large skillet and set aside.
- Take pan off heat and melt butter. Add onions and sauté for about 1-2 minutes. Add pineapple.
- Cover and let cook for about 30 minutes. Stir occasionally to make sure nothing burns.
- Preheat oven to 325 °F.
- Add chicken and sautéed pineapple/onion mixture to half of each flour tortillas along with shredded cheese.
- Fold each tortilla on top of itself and bake for about 10-15 minutes or until all cheese has melted and flour tortilla is browned and crispy. If you need a crispier tortilla, broil for a minute or two.
