Carrot Cake Baked French Toast Breakfast Casserole Recipe
One of my favorite classic dessert is the carrot cake with cream cheese frosting. It also screams to me, Spring…Easter…just plain yumminess. I wanted to have this for breakfast one day. And if you haven’t gathered by now, I have a raging sweet tooth.
Now most baked French toast casserole recipes I could find online was made with actual premade carrot caked bread soaked in a typical egg and milk mixture and baked for an hour. I really didn’t want to bake a loaf of bread only to tear it up to make another recipe. Now I am not saying that those recipes are bad or not worth the make. In fact, if I have leftover carrot cake bread that is not being eaten, I may just make this recipe with that bread. But in our house, carrot cake bread goes fast.

Carrot Cake Baked French Toast with Sweet Cream Glaze
Ingredients
- 1 loaf French bread, cut up…[$2.00]
- 6 large eggs, …[$1.38]
- 1½ cup + 3 tbsp. half and half, …[$0.85]
- 2 tsp. vanilla extract, …[$1.40]
- 1 tsp. cinnamon, …[$0.04]
- 2 cups carrot, shredded and divided…[$0.20]
- ⅓ cup raisins, divided…[$0.31]
- 1 cup sweetened shredded coconut, divided…[$0.80]
- 8 oz. cream cheese, …[$2.00]
- 1 cup powdered sugar, …[$0.34]
Instructions
- In a large bowl whisk eggs, milk, vanilla, and cinnamon together and set aside.
- In a greased 8×8 casserole dish, tear up ⅓ French bread loaf and place in bottom of pan. It should be enough bread to make a complete layer on the bottom of baking dish.
- Pour a small amount of egg mixture on top, just enough to soak all the bread.
- Sprinkle a handful of shredded carrot, raisins, and ⅓ cup coconut on top of bread.
- Put another ⅓ French bread pieces on top, then egg mixture and the rest of the carrots, raisins, and ⅓ cup coconut.
- Tear up the remaining bread and put on top. Pour the rest of the egg mixture so all the bread will be soaked. Top with remaining coconut, cover and refrigerate overnight.
- In the morning, preheat oven to 350 °F and baked covered for 1 hour.
- Make cream cheese glaze by mixing cream cheese, powdered sugar and milk together until smooth. Heat up if you desire a warm creamier look and consistency.
- After an hour, take off cover on French toast and broil for only a minute or so. Until the coconut turns a light brown on top. Add more coconut if desired.
- Let dish cool once it is taken out of the oven for about 5 minutes and serve with sweet cream cheese glaze.
