Chocolate Chip Banana Coffee Cake Recipe
I had one of those moments recently when I took an inventory of the kitchen pantry; fruits and vegetables in the fridge, spices in the cupboard, and meat and frozen goodies in the deep freezer. What I noticed was we still had bananas in the fruit bowl. You know the kind, the ones that get brown and the kids refuse to touch them. So I made my banana coffee cake with chocolate chips, another ingredient I had in limited supply, but wanted to finish.
What I love about coffee cakes, besides being a tasty morning treat, is you can bake them in any pan you have? I used an eight or nine-inch Springform Pan because when it comes out; it looks so pretty, especially when dusted with powdered sugar. It also works great in an 8×8 Pyrex Deep Baking Dish.

Chocolate Chip Banana Coffee Cake
Ingredients
- 1½ large bananas ripe and mashed…[$0.30]
- 4 oz. cream cheese room temperature…[$0.50]
- ½ stick butter softened…[$0.50]
- ½ cup white granulated sugar …[$0.15]

- ½ tsp. vanilla extract …[$0.35]

- ½ tsp. baking soda …[$0.02]
- ½ tsp. baking powder …[$0.02]

Instructions
- Preheat oven at 350 °F and grease a 8 or 9 inch springform pan.
- Blend ripe banana and cream cheese until smooth. Set aside for later.
- Cream butter and sugar together until smooth. Add eggs, vanilla, and sour cream and blend again. Beat in the baking powder, soda, and flour until batter is smooth and no lumps are visible. Fold in chocolate chips.
- Pour ¾ of the chocolate chip batter in the bottom of the greased springform pan.
- Spread the banana cream cheese mixture on top then top the cake with the remaining chocolate chip batter evenly.
- Bake for 50 minutes or until a toothpick comes out clean.
- Remove from oven and let cook. Sprinkle with powder sugar if preferred.
