Chocolate Chip Coconut Bars Recipe with Oatmeal Crumble

Do you ever have those weeks when you need to cook or use everything in your pantry so you can start new? Well, I have those weeks a lot and especially in the Spring when I need to start making more room for the incoming harvests of the summer gardens. And these coconut oatmeal bars were the product of such a “pantry spring cleaning.”
So this specific day, I wanted to make a dessert for the kiddos. Oh, who am I kidding, for me too! I had my basics of oats and flour but also a 1/4 bag of dark chocolate chips; one can of sweetened condensed milk and some shredded coconut. It was like a light bulb turned on. I can make some “Mounds” oatmeal bars.
These bars are easy to make and are great for the whole family. You will see I used an 8 x 8 casserole dish for these bars which serves about 12-16. This size depends on how large you cut them. I cut my coconut oatmeal bars into small pieces. Between the sweetened condensed milk, coconut, and chocolate, this dessert is very sweet. A little bit goes a long way.
Cost to make this recipe.
There isn’t much to make this recipe cheaper on a homesteader level. I don’t grow or raise any of the ingredients. The complete cost of this dessert came to about $7.90 for a large pan of bars. You can cut about 16 bars as serving size. This price is about $0.50 per single serving. To make smaller bite-size pieces, the price can go down to $0.25 or maybe even cheaper.

Chocolate Chip Coconut Crumble Bars
Ingredients
- 1 stick butter, softened…[$1.00]
- 1 cup brown sugar, …[$0.47]
- 1 cup all purpose flour, …[$0.23]
- 1 cup quick oats, …[$0.28]
- 1 tsp baking powder, …[$0.04]
- ½ tsp salt, …[$0.04]
- 14 oz sweetened condensed milk, …[$1.64]
- 2 cups sweetened shredded coconut, …[$1.60]
- 2 tsp vanilla extract, …[$1.40]
- ½ cup chocolate chips, …[$1.20]
Instructions
- Cream softened butter with brown sugar until everything is mixed together.
- Add flour, oats, baking powder, and salt to the creamed sugar. Blend together until mixture is wet and crumbly.
- Grease a 8 x 8 casserole dish and spread ¾ of the oat/flour mixture on the bottom. Press down mixture firmly and keep the remaining mixture set aside until later.
- In a separate bowl, mix together condensed milk, coconut, and vanilla. Then fold in chocolate chips.
- Spread coconut mixture on top of dough in 8 x 8 casserole dish. Sprinkle remaining dough mixture on top of coconut.
- Bake uncovered at 350 °F for 25-30 minutes or until top starts to brown.
- Place in refrigerator for at least 4 hour so the bars can set properly. Then cut bars to the size you choose.
