Cinnamon Roll Pancakes Breakfast Recipe
So I am finishing up my “umpteenth” load of laundry and had such an intense need…desire for a large, ooey-gooey cinnamon roll. But at 4:00pm, I was not about to make a batch of cinnamon rolls when dinner had to get made for three hungry mouths. So I made breakfast for dinner, one of our families favorite things by the way.
These pancakes are not the ones that you see on the internet, Pinterest mainly. You know the ones with the cinnamon swirl cooked right into the pancake. I have tried those and, for me, they never came out properly at all. The cinnamon swirl always burned and stuck to the pan. But I made a warm, sweet cinnamon syrup to flow over the top instead. Along with that, a simple vanilla glaze to also go on top.
I am not kidding, these pancakes taste just like a warm cinnamon roll. Oh my goodness, I may never make real cinnamon rolls again because this is so much easier.
Do you have a homemade pancake mix that you use all the time or do you buy it? With absolutely no knock on the store bought brands, I personally make my own and store it in an air tight container. It is easy to make and I always have the individual ingredients on hand. My basic pancake mix is 3 cups all purpose flour, 7 teaspoons baking powder, and 4 tablespoons white granulated sugar. This recipe below uses my mix but you can substitute the box stuff too. Not a problem. My pancake mix costs $0.47 for this recipe and any pancake mix to make.

Cinnamon Roll Pancakes
Ingredients
Basic Pancakes
- 1½ cups all purpose flour, …[$0.35]
- 1 tsp baking powder, …[$0.04]
- 1 large egg, …[$0.23]
- 1 cup milk, …[$0.23]
Cinnamon Syrup
- ½ stick butter, …[$0.50]
- 1 cup brown sugar, …[$0.47]
- 1½ tsp. cinnamon, …[$0.06]
- 1 tsp. vanilla extract, …[$0.70]
- 1 cup water, …[$0]
Vanilla Glaze
- 1 cup powdered sugar, …[$0.34]
- 2 tsp milk, …[$0.01]
Instructions
Cinnamon Syrup
- Make the cinnamon syrup first by melting the butter and brown sugar together over low heat in a medium size pot.
- Add cinnamon, vanilla and water and bring to a boil over medium-high heat then reduce quickly to low heat.
- Stir occasionally and simmer for about 8-10 minutes to reduce and become a thicker syrup.
Pancakes & Vanilla Glaze
- While the syrup is simmering, whisk together the pancake mix, egg, and milk. Pour the batter on a greased skillet to make about 8 pancakes and cook until golden brown on each side.
- In a small bowl, whisk powdered sugar and enough milk until you get a creamy consistency.
- Pour your warm cinnamon syrup and vanilla glaze on top of the cooked pancakes and enjoy.
