Best Grilled Steaks Recipe with Multiple Styles of Compound Butters
Grilled steaks with compound butters are one of the most requested dinners from my husband. He is a meat and potatoes Southern boy. I have learned to perfect the steak on the stovetop and then finishing them in the oven to get the proper temperature.
I have a Lodge 10.5 Inch Square Cast Iron Grill Pan, which I love to cook my steaks. First of all, my pan has the grill on the bottom which gives those impressive grill marks and keeps the fat lower than the steak. This pan being cast iron is also fantastic for the oven, so there is no need to change cooking pans and make more of a mess in the kitchen.
Now, of course, you don’t need to add compound butter, but it just elevates your steaks that much more if you do add it. If you check out below, I have laid out several different varieties of compound butter. The options are endless for this recipe.

Add any of these great flavored compound butter recipes to one stick of unsalted butter.
HONEY BOURBON: 1tbsp honey + 1/2 T bourbon + 1/4 tsp salt + 1/4 tsp black pepper.
HORSERADISH: 2 tbsp. prepared horseradish + 1 tbsp. minced shallots + 1/2 tbsp. dill + 1/4 tsp salt + 1/4 tsp black pepper.
CAJUN: 2 tbsp. Cajun seasoning + 1 tbsp. honey + 1/2 tsp garlic powder + 1/4 tsp salt + 1/4 tsp black pepper.

Cost of Recipe:
A steak meal is not one that is inexpensive. Eating a steak meal at a restaurant can cost upwards of $25 per plate. Fortunately, this entire recipe can cost $25 to feed four people. The entire cost comes from the steak. The better the steak, the more the price so this is all up to what you buy. My steaks typically cost around $6.62 per steak.
On the other hand, the butter is the cheap portion of this recipe. As homesteaders, all these herbs, except for the salt and pepper, are made and dried here so they cost me nothing.

Compound Butters on Grilled Steak
Ingredients
Steak Butter
- 1 stick unsalted butter, softened…[$1.00]
- ¼ tsp garlic powder, …[$0.02]
- ¼ tsp onion powder, …[$0.02]
- ¼ tsp salt, …[$0.02]
- ¼ tsp black pepper, …[$0.23]
- ¼ tsp paprika, …[$0.05]
- ¼ tsp chili powder, …[$0.04]
- ¼ tsp dill, …[$0.04]
- ¼ tsp thyme, …[$0.05]
Grilled Steak
- 4 ¾ inch thick steaks, …[$25.00]
Instructions
Steak Butter
- Blend softened butter with all ingredients until evenly mixed.
- Remold butter into a stick form or press into a container and refrigerate until ready to use.
Grilled Steak
- Take steaks out of refrigerator and let return to room temperature.
- Heat an oven safe skillet, if possible, with raised grill bottom on high heat. Preheat oven to 400 °F.
- Sprinkle a little salt and pepper on top of each steak and sear steaks on one side for 1-2 minutes. Add one tablespoon of compound butter to pan.
- Flip steaks over and baste the top of the steak with the melted butter in pan with large spoon. Sear for another 30-40 seconds.
- Place entire pan in the oven to finish steaks off. How long you keep steaks in the oven is determined by how rare you want them to turn out. For medium rare, I typically keep them in the oven for 5-6 minutes. Look above for steak temperature chart to help.
