
Cookie Butter Pound Cake
Pound cakes have become my go-to family dessert, and they’re always a hit at our table. Everyone raves about my cinnamon roll pound cake. Two other favorites, the carrot cake pound cake and the vegetable pound cake, never fail to disappear quickly. My cookie butter pound cake is no exception; it’s an absolute crowd-pleaser. Baked in a large Bundt pan, this cake is generous in size. It can last several days. Well, possibly four to five days. That is, if it somehow manages to resist eager hands snatching slices along the way.
The Biscoff Cookie Butter Spread is one of my favorite sweet spreads. It is the type I use for this recipe. The cookie butter in the cake batter dries out the cake slightly. So the cookie butter frosting, with its sweetness, goes perfectly together. And it is a not too sweet pound cake even with the frosting topping. This is great because the husband is not a big fan of super sweet desserts. The husband just loved this one.

Cookie Butter Frosting

Instructions
Pound Cake
- Grease a tube angel food pan or Bundt cake pan. Preheat the oven to 350 °F
- Cream butter, sugar and cookie butter together until smooth. Beat in one egg at a time then add in remaining ingredients and blend until batter is smooth.
- Bake cake in oven for 50-60 minutes or until toothpick comes out clean. Remove from oven and let cool down slightly on a wire rack.
Cookie Butter Frosting
- Blend together all frosting ingredients until smooth. Add enough milk to your liking; more for thinner frosting, less for thicker.
- Spread frosting over warm cake and enjoy.

Instructions

- Grease a tube angel food pan or Bundt cake pan. Preheat the oven to 350 °F
- Cream 2 sticks butter, 2 cups white granulated sugar and 4 heaping tbsp cookie butter together until smooth. Beat in one egg at a time then add in remaining ingredients (6 large eggs, 1 tsp baking powder, 2½ cups all purpose flour, ½ tsp vanilla extract, ½ tsp almond extract and blend until batter is smooth.
- Bake cake in oven for 50-60 minutes or until toothpick comes out clean. Remove from oven and let cool down slightly on a wire rack.
Cookie Butter Frosting
- Blend together all frosting ingredients (4 oz cream cheese, 2 tbsp cookie butter, 2 cups powdered sugar, 1 splash milk) until smooth. Add enough milk to your liking—more for thinner frosting, less for thicker frosting.
- Spread frosting over warm cake and enjoy.

This is a very moist, delicious pound cake! My whole family enjoyed it. I found the cookie butter flavor pretty subtle so may try adding more next time to enhance the taste (it’s possible that my heaping tbsps were not heaping enough). Usually cakes take a little longer in my oven, but this one was done right at 50 minutes. Will definitely be making this again!
