
Double Banana Pound Cake Recipe
How many times have you bought a bunch of bananas and eaten the majority of them? You then end up with that one very overripe banana. It just sits there on the counter, mocking you with its increasingly brown and speckled skin. No matter how many bananas I buy from the store, there is always that one banana nobody wants to touch. It lays there like a forgotten relic. It’s a reminder of my good intentions to eat healthily.
I often try to ignore it. I hope it will somehow vanish. Yet, it insists on staying. It remains a lonely sentinel of fruit gone bad. But the banana isn’t enough to do anything meaningful. I question why I continue to buy them. It’s as if the universe conspires to leave me with this sad, neglected fruit. I keep purchasing bananas and consuming most of them. Then, I always face the fate of that one overripe banana. It feels like an inevitable part of my grocery routine.
The phrase I always hear is, “But mama, it’s all brown and yucky. I don’t want to eat that,” from everyone in this house. I just hate to throw anything away. Before I found this recipe, I gave those overly ripe bananas to the chickens. It was one fantastic treat. So, no, they didn’t go to waste. Now, I can use them for the humans at this homestead.

Double Banana Pound Cake
Ingredients
- 1 stick butter, softened…[$1.00]
- 2 cups white granulated sugar, …[$0.58]
- 3 large eggs, …[$0.69]
- 1 tsp. vanilla extract, …[$0.70]
- 1 Tbsp. banana extract, …[$2.10]
- ½ cup milk, …[$0.12]
- 1 large over ripe banana, …[$0.20]
- 1 tsp. baking powder, …[$0.04]
- 3 cups all purpose flour, …[$0.69]
Instructions
- Preheat oven at 350 °F and grease a Bundt or angel food cake pan.
- Blend sugar and butter until smooth. Add all liquid ingredients and banana to sugared butter mixture and mix until smooth.
- Add baking powder and flour and mix until smooth.
- Pour batter in Bundt or Angel food cake pan. Bake for 50-60 minutes or until toothpick comes out clean.
- Take cake out and let cool on wire rack.

- Add 1 tsp. baking powder and 3 cups all purpose flourix until smooth.
- Pour batter in Bundt or Angel food cake pan. Bake for 50-60 minutes or until toothpick comes out clean.
- Take cake out and let cool on wire rack.
