My garlic chili marmalade chicken dish gives both a punch of spice and of sweet. Using garlic chili paste is the main ingredient for the spicy component. You can reduce or add more than what my recipe states. Just remember that the spice will increase as it cooks.
The sweet component comes from a pre-made marmalade. In my recipe, I used my homemade carrot pineapple orange marmalade. You can use an orange marmalade as a great substitution if you wish.
Another great component of this meal is that it is a complete one-pot meal. This means that the entire meal feeds four people and uses one pan. Very few dishes to clean, and it is prepared quite quickly to feed hungry mouths.

I calculated this recipe to cost about $7.56 or about $1.89 per serving. This price includes a serving of white rice and as serving of carrots as another side. Thus, this recipe is a complete meal that costs less than two dollars per serving. To me, that is fantastic, and you definitely can’t get this price at a restaurant, even fast food.

Garlic Chili Marmalade Chicken Thighs and Rice
Perfect chicken thighs topped with a spicy garlic chili and sweet marmalade sauce topped over white rice.
Peel and cut carrots or any vegetable and set aside until later.
Cook rice accordingly in a separate medium size pot.
Whip together the first six ingredients in a small bowl and set aside.
In a non stick skillet, brown chicken thighs. Sprinkle ginger, onion, garlic, salt, and black pepper over all chicken. Flip over and brown seasoned side of chicken.
Flip chicken back over again and place cut veggies in skillet and pour chili marmalade sauce over chicken. Cover and bake in oven at 350 °F for 30-40 minutes.
