Vanillekipferl: A Traditional German Christmas Vanilla Crescent Cookies Recipe
I know my vanillekipferl cookies don’t exactly look like the original German vanilla crescent cookies, but they taste like the original. Reminiscing with my husband about a German Christmas, I can remember being sent these cookies from my Oma and Opa every year. So, of course, I had to make them myself. My feeling is that the taste is perfect, but my crescent shapes need a bit of work. These look more like horseshoe cookies than crescents but oh well. The family loved them, and so did I. I think you will love them too.
This recipe calls for caster sugar. You might be wondering what that sugar is. Caster sugar is typically used more in European baking. You can find it here, but you can also make it easier in your kitchen. Caster sugar is a finer sugar granular. It is best explained as a sugar granular size between powdered sugar and your regular white granulated sugar. You can make caster sugar but pulsing white granulated sugar in a chopper, blender or grinder.

Vanillekiperf: German Vanilla Crescent Cookie
Ingredients
- 2½ cups all purpose flour, sifted…[$0.58]
- 1 cup powdered sugar, …[$0.29]
- 2 pods vanilla beans, …[$1.00]
- 1 stick butter, cold…[$1.00]
- 4 egg yolks, …[$0.92]
- ¼ cup powdered sugar, …[$0.08]
Instructions
- Stir together flour, sugar, and vanilla beans in a large bowl. Blend in cold butter until all butters is small bits. Beat in egg yolks. Knead dough with hands until smooth.
- Roll dough into a tube shape and cut into 6 equal pieces.
- Roll out each piece of dough into breadstick shape. Place plastic over it and refrigerator for at least 2 hours.
- Cut each “breadstick” into 6 equal pieces and form into crescent shape cookies on baking sheet.
- Bake at 350 °F for 8 -10 minutes.
- While cookies are warm, sift with powdered sugar and let cool on wire rack.
