Irish Colcannon Mac and Cheese Recipe
We are all big fans of mac and cheese, especially my Irish colcannon mac and cheese. This is a great creamy three-cheese macaroni base. It has cooked corned beef and bacon bits and chopped green cabbage mixed in.

I calculated the total cost for this Irish Colcannon Mac and Cheese meal to cost around $19.91 or about $2.49 per serving size. This is a wonderful price for a complete meal that includes a protein source, veggie, and grain.
As a homesteader, you can make this recipe slightly cheaper if you grow green cabbage, leeks, and garlic as we do. It doesn’t save a ton, but it can make this recipe cost roughly $17.37 or $2.17 per serving size. Unfortunately, the bulk of the cost comes from the meat and cheeses which I don’t raise or make at home.

Irish Colcannon Mac & Cheese
Ingredients
- 1 lb elbow pasta …[$1.00]
- 8 slices bacon chopped…[$3.68]
- 3 medium leeks sliced…[$1.50]
- 3 cloves garlic minced…[$0.15]
- 2 cup corned beef chopped…[$1.38]
- 1 medium green cabbage chopped…[$0.89]
Cheese Sauce
- 4 Tbsp butter …[$0.50]
- 4 Tbsp all-purpose flour …[$0.04]
- 3 cups milk …[$0.69]
- 6 oz Monterey jack cheese cubed…[$3.36]
- 6 oz white sharp cheddar cubed…[$3.36]
- 6 oz Havarti cheese cubed…[$3.36]
Instructions
- Boil a pot of water and cook elbow pasta accordingly.
- In a large pan, fry chopped bacon over medium-high heat for 8 minutes, then add in corned beef, leeks, and garlic for another minute.
- Reduce heat and toss in chopped green cabbage. Cover and let simmer to cook and wilt green cabbage.
Cheese Sauce
- In a medium pot, melt butter over medium heat and whisk in flour. Cook for a minute, be careful not to burn.
- Pour in milk and let the mixture thicken as it cooks. Whisk often. When thickened, add all cheese and mix often. Cheese should melt in about 10 minutes over medium heat.
- When all components are cooked, then mix everything together in a large bowl and serve hot.
