Oatmeal Cake
This oatmeal cake is one of the best tasting, easy making, a family-pleasing dessert you can bake. The quick oats, brown sugar, and applesauce really come through in this simple yet delectable sweets.
The oatmeal cake bakes great for any holiday or occasion. It works perfectly for holiday parties, informal family gatherings, or just because your sweet tooth is acting up. I love to make this for my daughter’s school functions. The PTA likes to say thanks to all the hard-working teachers and asks parents to submit homemade desserts. This is super easy to whip up for those great moments.

With all purchased ingredients, I calculated this recipe to cost about $5.87 or $0.49 per serving slice. This relatively cheap dessert cost is another reason I absolutely love this recipe. As a homesteader, the only two ingredients I grow and make is the applesauce and eggs. My homesteader price comes to around $4.86 or $0.41 per serving slice. It isn’t much of a price difference but that’s okay, every bit helps.

- ½ cup applesauce, …[$0.55]

- 1½ cup all purpose flour, …[$0.35]

Icing

Instructions
- Preheat oven to 350 °F. Grease a 13 x 9 inch casserole dish.
- Cream together butter and two sugars. Blend in oats, water, applesauce, and eggs until smooth.
- Add in all dry ingredients; flour, salt, baking powder, baking soda, and cinnamon. Blend again until smooth.
- Pour batter into greased casserole dish and bake for 30-35 minutes or until toothpick comes out clean. Take out of oven and set oven to broil.
Icing
- In a saucepan, bring butter, brown sugar, and milk to a boil.
- Take off of heat and stir in shredded coconut. Pour on top of hot cake. Set cake under broiler until the entire top starts boiling. Take out of oven and let completely cool.
