These oatmeal lace cookies are pretty inexpensive to whip together. I rounded our cost to $5.50 for the entire batch. That runs about $0.18 per cookie. The bulk of the cost is the butter at about $2.00 for two sticks.
As a homesteader, there aren’t really any ingredients that I can grow or raise to decrease the cost of this recipe. We do raise our eggs and make our vanilla extract.

Oatmeal Lace Cookies
Ingredients
- 2 sticks butter, …[$2.00]

- 2 cups rolled oats, …[$0.56
- 4 tbsp. flour, …[$0.06]
- 1 tsp. salt, …[$0.07]
- 1 tsp. vanilla extract, …[$0.70]
- ½ tsp. ground cinnamon
- 1 large egg, beaten…[$0.23]
Instructions
- Preheat oven to 375 °F and prepare lined baking sheets with parchment paper.
- Melt butter and brown sugar in a saucepan over medium heat. Stir often until mixture is smooth.
- Remove from heat and stir in oats, flour, salt and vanilla extract. Add in egg when mixture has cooled down so it doesn’t cook into a scrambled egg.
- Place a tablespoon of cookie mixture on lined baking sheet. Leave about 2 inches distance from each cookie. They will spread and fall flat. Bake for about 10 minutes or until edges turn golden brown.
- Remove baking sheet from oven and don’t touch cookies. They are too soft and warm to move. After 15 minutes you can use a spatula and place cookies on wire rack to complete the cooling process.
- Store cookies in a tin or in the refrigerator.
