Pasta e Fagioli soup has long been a favorite for both me and my family whenever we visit Olive Garden. Its comforting blend of tender pasta, hearty beans, and rich, savory broth always hits the spot. But with restaurant visits not always practical—or affordable—I decided to recreate this beloved soup at home. Making it myself allows me to capture all the flavors we love. I can perfect the seasoning and ensure the vegetables are tender. It’s the warmth of a homemade meal that rivals the restaurant version. Now, whenever the craving strikes, I can enjoy a steaming bowl of Pasta e Fagioli without leaving the kitchen. This brings that familiar comfort straight to our table.
It is a perfect slow cooker soup, which is great for those cooler weather months. I love that you can brown up the meat. You can throw in all the ingredients in the slow cooker and let it go. An Instant Pot works amazingly for this recipe because there are no other pots and dishes to get dirty. You can simmer the meat and veggies with the saute mode and then add everything and slow cook.

- 1 large carrot julienned…[$0.10]
- 2 stalks celery chopped…[$0.20]
- 2 cloves garlic minced…[$0.10]
- 29 oz diced tomatoes …[$2.96]
- 15 oz red kidney beans …[$2.50]
- 15 oz Great Northern Bean …[$2.50]
- 15 oz tomato sauce …[$0.90]
- 12 oz V8 Juice …[$1.31]
- 1 Tbsp white vinegar …[$0.02]
- 1½ tsp salt …[$0.11]
- 1 tsp dry oregano …[$0.12]
- 1 tsp dry basil …[$0.12]
- ½ tsp black pepper …[$0.46]
- ½ tsp dry thyme …[$0.09]
- ½ lb pasta …[$0.50]
Instructions
- Brown the ground beef in a large saucepan over medium heat. Drain off the fat.
- Add onion, carrot, celery, and garlic. Cook for another 10 minutes. Add remaining ingredients except for the pasta and simmer in a pot for one hour.
- For a slow cooker, brown meat, drain fat and add remaining ingredients except for the pasta and cook on low for 6 hours. For pressure cooker, brown meat, drain fat and add remaining ingredients except for the pasta and cook on high pressure for 20 minutes.
- Cook pasta accordingly and add pasta to the soup. Serve hot and enjoy.

Add remaining ingredients (29 oz diced tomatoes, 15 oz red kidney beans, 15 oz great Northern beans, 15 oz tomato sauce, 12 oz V8 juice, 1 tbsp white vinegar, 1½ tsp salt, 1 tsp dry oregano, 1 tsp dry basil, ½ tsp black pepper, ½ tsp dry thyme) except for pasta and simmer in a pot for one hour.
