The residents of this homestead receive a beautiful homemade cake from me on their birthday. My girls get to pick what design of cake they want, of course within reason, along with flavors. I have made a two
For the husband who doesn’t like a whole lot of sweets, I decided to take a spin on breakfast. Breakfast is one of his favorite meal of the day. Waffles and bacon are great staples for breakfast in this house and so I had to incorporate them both into a spectacular dessert cake for the husband’s birthday. And of course, you need that touch of maple syrup that goes perfect with both waffles and bacon.
Now for a little word of warning about making these pound cake waffles in your kitchen. First of all, I used an older model of an Oster DuraCeramic Belgian Waffle Maker. My waffle maker doesn’t have proper temperature control. It only states low, medium, high, and everything in between. When I cooked my pound cake waffles, I set my temperature on medium and cooked for about 8 minutes.
Your waffle iron will, more than likely, be quite different than mine. You will need to use your first waffle as a test on where your temperature needs to be and for how long they need to cook. When you lift the lid, the waffle should come off clean on both sides.
Also, make sure you don’t overstuff the iron with too much batter. The best method for ladling your batter into the waffle iron is to spoon it into the center of the iron and then spread it out with a spatula to the edges. It is okay if you see the raised waffle iron edges through the batter. This is a cake batter and will rise slightly as it cooks.
Cost to make this recipe.
This amazing cake was calculated to cost around $10.39 or about $1.30 per cake slice. The bacon and butter are the most costly ingredients in the dish but unfortunately, are necessary for the entire dessert. As a homesteader, there are only a couple of ingredients I can make or raise to help lower the cost; vanilla extract and eggs.

- 6 large eggs, room temperature…[$1.38]
- 1 tsp baking powder, …[$0.04]

Instructions
Bacon Maple Frosting
- Cut the majority of the fat from the back and throw away. Cut the remaining bacon into small bits and fry in a pan until cooked through and crispy. Set aside and drain on a towel to save for later.
- Beat together the remaining ingredients for frosting until smooth. If the frosting is too thick, just add a light splash of milk. Set frosting aside for later.
Pound Cake Waffles
- Cream together softened butter and white sugar. Add in vanilla and eggs one by one until everything is incorporated. Finally blend in baking powder and flour.
- Heat up your waffle iron on a medium heat and grease top and bottom. Pour batter into waffle iron. Spread the batter on bottom and don’t over stuff because the cake will rise.
- Cook each waffle for about 5-8 minutes. WARNING!!! Every waffle iron is different and temperatures are hard to judge. Test and judge how long you need to cook with the first waffle and go from there. Look in the post above for more tips and tricks.
- Set each cooked waffle on a wire rack and let cool. Layer each cake waffle with frosting in between each layer and then frost the outside. Sprinkle cooked bacon on top and enjoy.
