
Pound Cake Waffles with Maple Buttercream Frosting & Bacon Sprinkles
On this homestead, birthdays are celebrated with a special touch: a homemade cake, crafted with love and care. My girls have the joy of choosing both the flavor and the design. This is done within reason, of course. Each cake turns into a reflection of their imagination. Over the years, I’ve brought some whimsical visions to life. These include a two-layer waterfall cake teeming with dinosaurs. There is also a playful bathtub cake adorned with rubber duckies. I even made a Jake and the Neverland Pirates ship cake that seemed ready to sail right off the table. Each creation is more than a dessert. It is a celebration of creativity and joy. It’s about the simple magic of turning a special day into a memorable experience.
For my husband, who isn’t one for overly sweet treats, I wanted to give breakfast a celebratory twist. Breakfast has always been one of his favorite meals. In our house, waffles and bacon are staples he never tires of. So for his birthday, I decided to transform these morning favorites into a spectacular dessert cake. I combined the crisp, golden waffles with savory strips of bacon. This created a surprising yet delightful pairing. And, naturally, no birthday breakfast-inspired cake would be complete without a drizzle of maple syrup. It ties together the sweet and savory in a way that’s both indulgent. The result is perfectly suited to his tastes.
Now for a little word of warning about making these pound cake waffles in your kitchen. First of all, I used an older model of an Oster DuraCeramic Belgian Waffle Maker. My waffle maker doesn’t have proper temperature control. It only states low, medium, high, and everything in between. When I cooked my pound cake waffles, I set my temperature on medium and cooked for about 8 minutes.
Every waffle iron is a little different, so your results may vary from mine. It’s always best to use the first waffle as a test. This will help you gauge the ideal temperature and cooking time for your specific appliance. When it’s done, lifting the lid should reveal a perfectly cooked waffle. It should release cleanly on both sides. The waffle will be golden and crisp, ready to become the centerpiece of your breakfast. Or in this case, it can be used for your dessert cake creation.
Also, make sure you don’t overstuff the iron with too much batter. The best method for ladling your batter is to spoon it into the center of the waffle iron. Then, spread it out with a spatula to the edges. It is okay if you see the raised waffle iron edges through the batter. This is a cake batter and will rise slightly as it cooks.

The bacon and butter are the most costly ingredients in the dish but unfortunately, are necessary for the entire dessert. As a homesteader, there are only a couple of ingredients I can make or raise to help lower the cost; vanilla extract and eggs.

Ingredients
Bacon & Maple Buttercream Frosting
- 5 slices bacon, fat trimmed off…[$2.30]

Pound Cake Waffles
- 2 sticks butter, softened…[$2.00]
- 2 cups white granulated sugar, …[$0.58]
- ½ tsp vanilla extract, …[$0.35]
- 6 large eggs, room temperature…[$1.38]
- 1 tsp baking powder, …[$0.04]
- 2½ cups all purpose flour, …[$0.58]
Instructions
Bacon Maple Frosting
- Cut the majority of the fat from the back and throw away. Cut the remaining bacon into small bits and fry in a pan until cooked through and crispy. Set aside and drain on a towel to save for later.
- Beat together the remaining ingredients for frosting until smooth. If the frosting is too thick, just add a light splash of milk. Set frosting aside for later.
Pound Cake Waffles
- Cream together softened butter and white sugar. Add in vanilla and eggs one by one until everything is incorporated. Finally blend in baking powder and flour.
- Heat up your waffle iron on a medium heat and grease top and bottom. Pour batter into waffle iron. Spread the batter on bottom and don’t over stuff because the cake will rise.
- Cook each waffle for about 5-8 minutes. WARNING!!! Every waffle iron is different and temperatures are hard to judge. Test and judge how long you need to cook with the first waffle and go from there. Look in the post above for more tips and tricks.
- Set each cooked waffle on a wire rack and let cool. Layer each cake waffle with frosting in between each layer and then frost the outside. Sprinkle cooked bacon on top and enjoy.
