Pumpkin Lasagna Recipe with Sweet Chicken Sausage
This is quite a unique twist on lasagna. Seasoned pumpkin puree layered with buttered onion and sweet chicken apple sausage with mozzarella cheese.
I have to admit, my husband was quite skeptical about this dish. Honestly he has only eaten pumpkin in pies, bread, and generally sweet dessert dishes. He didn’t think he would like it as an entrée, especially lasagna. But he did and so did my girls who are 4 and 1 years old.
We have expanded our garden to twice its size this year and I plan on growing more pumpkins along with other vegetables. I wanted to expand my entrée recipes to include more pumpkin. This is my first pumpkin entrée recipe and it definitely makes me want to try more.

Pumpkin Lasagna with Chicken Apple Sausage
Ingredients
- 9 lasagna noodles, …[$1.00]
- 5 cups pumpkin puree, thawed…[$6.25]
- ½ stick butter, …[$0.50]
- ½ cup heavy cream, …[$0.58]
- 1 tbsp. salt, …[$0.21]
- ½ tbsp. dried sage, …[$0.30]
- ½ tbsp. dried thyme, …[$0.27]
- 4 links sweet chicken apple sausage, chopped…[$4.25]
- ½ large onion, chopped…[$0.25]
- 5 cups mozzarella cheese, shredded…[$6.25]
Instructions
- In a large pot, cook noodles al dente and not completely cooked.
- In a large skillet, sauté chopped sausage and onion for about 10 minutes or until onion is translucent.
- In a large sauce pot, bring pumpkin puree to a slow boil. If you are using frozen pumpkin puree boil for about 5 minutes to boil off the excess water from the freezing process. If you are using canned then you can skip this step.
- Add heavy cream, butter, and seasonings to pumpkin puree. Cook for another 10-15 minutes.
- Preheat oven to 350 °F and grease a 9×13 casserole dish.
- Put together the lasagna as directed: pumpkin puree, noodles, pumpkin puree, half sausage mixture, 1 cup cheese, noodles and then repeat the process.
- Bake for one hour covered and then put under broiler afterward to brown mozzarella cheese on top.
- When done, let lasagna sit for about 15 minutes so you can cut into it without everything falling apart.
