Pumpkin Pierogi Recipe with Spicy Maple Sweet Potato Sauce
A rich and creamy sweet potato sauce over homemade pumpkin pureed filled pierogis or dumplings. This recipe is the unique dinner recipe I probably have ever come up with so far. When I made my large batch of pumpkin pierogis and froze them for later, I knew I had to find different ways to use them that wouldn’t bore the family or me.
After Thanksgiving, I had so many leftover whole sweet potatoes that I needed to get creative in ways to use them up. They were on sale for $0.39/pound right before Thanksgiving so I, of course, bought close to 10 pounds. That is easy to do with sweet potatoes. Pureeing the potatoes into a sauce was so perfect I am still patting myself on the back.
Oh, and by the way, it is good too. I would suggest adding the milk in a little at a time. Depending on the size of the sweet potato you use, you may be adding a little less or more milk then I have suggested. Also, you may want to add the hot pepper powder a half a tablespoon at a time depending on your spice levels. Make sure you let the sauce cook before adding more. The spice will get hotter as it cooks and heats up.
This recipe is most definitely a vegetarian entrée. I have been in the habit lately of making more vegetarian dinners quite by mistake. Trying to eat healthier
But as I was preparing this new recipe, I realized that it wasn’t just vegetarian. It was more a paleo and vegan dish. For the sauce, I used cow’s milk, but you can easily substitute it for either almond or coconut milk. You can also use a couple of tablespoons of vegetable or coconut oil to replace the butter.

I calculated this main entrée to cost around $5.99 total and about $1.00 per serving size. Any extras like side dishes aren’t included and would increase the cost to make this recipe.

Pumpkin Pierogis with Spicy Maple Sweet Potato Sauce
Ingredients
Pierogis
- Dough for pierogis, raviolis, tortellini, wontons or any other form of dumpling.
- 1 cups pumpkin puree, …[$1.25]
- ⅕ cup brown sugar, …[$0.10]
- ⅛ tsp. nutmeg, …[$0.05]
- salt and pepper
Sweet Potato Sauce
- ½ stick butter, divided…[$0.50]
- 3 cloves garlic, minced…[$0.35]
- ½ large onion, chopped…[$0.50]
- 1 whole sweet potato, chopped…[$0.65]
- 1 cup coconut milk, …[$0.74]
- 4 tbsp. maple syrup, …[$1.12]
- 1-2 tbsp. chipotle or cayenne powder, …[$0.20]
- 1 tsp. salt, …[$0.07]
- ½ tsp. pepper, …[$0.46]
Instructions
Pierogis
- Prepare your dumpling dough. You can find the details from the link in the post.
- Combine pumpkin puree, brown sugar, nutmeg, salt and pepper in a bowl and mix well.
- Spoon appropriate amount of pumpkin mixture into center of dough. Somewhere between 1-2 tablespoons.
- Crimp edges and set aside for cooking later.
- To freeze for later, lay pumpkin pockets on a baking sheet and freeze for about 4 hours. Take out and store in plastic freezer bags for later use
Sweet Potato Sauce
- In a skillet sauté minced garlic, chopped onion, and chopped sweet potato in 2 tbsp. butter.
- When the sweet potatoes are soft, add the rest of the butter, milk and maple syrup and mash or blend the mixture until it is completely smooth.
- Add seasonings to taste and mix again until everything is even and creamy.
- Top sauce on pierogis and serve hot.
