The husband didn’t know if he was going to like my bacon ranch chicken meatloaf. I sometimes have to plop his dinner before him without saying what it is. But he ate it and loved it. That’s what I have to do with the husband and most times with the kiddos. If I tell them all the ingredients in a meal, they may protest. Most likely give a face and whine. Not even having time to enjoy the dinner without even trying it. Or they will have already got it in their heads that they hate it and then there is no turning back.
But, I can say for a definite fact that this meatloaf is a family winner, baked repeatedly in my kitchen. The entire family’s plates wiped clean every time when I make this for dinner. The bacon and ranch combination is a sure winner alongside the ground chicken base of meatloaf. It is delicious, a family favorite, and a healthier meatloaf option than its beef counterpart.

I have calculated that my entrée of bacon ranch chicken meatloaf cost me roughly $7.00 to make for the family. Most of the price comprises meat, bacon, and ground chicken. While some homesteads provide their meats, we, unfortunately, do not. We are subject to purchase our meats that the grocery store and so there isn’t much for me to reduce the cost of this entrée.
I do, however, make my breadcrumbs from leftover bread, ranch dressing that can save a few cents, raise our eggs, and grow garlic and onions. It saves a little for this recipe. And every penny counts in this day and age.

Bacon Ranch Chicken Meatloaf
Ingredients
- 4 slices bacon chopped small…[$1.50]
- ½ large onion chopped small…[$0.50]
- 1 lb ground chicken …[$4.00]
- 2 tsp. garlic powder …[$0.08]
- 1 large egg …[$0.23]
- ¾ cup breadcrumbs …[$0.18]
- 6 tbsp. ranch dressing divided…[$0.51]
Instructions
- In a small skillet, cook chopped onions and bacon together over medium heat. Cook until bacon is done, drain and set aside.
- Preheat oven to 375 °F and grease a small casserole dish.
- In a large bowl, mix together cooked bacon and onion mixture, ground chicken, garlic, egg, breadcrumbs, and 3 tbsp. ranch dressing. Mix until everything is even.
- Press ground meat mixture into a loaf form and put into a greased casserole dish. Bake for 45 minutes or until meatloaf is golden brown on top.
- Spread the remaining ranch dressing on top and serve hot.
