Meatloaf with Tomato Soup Gravy Recipe with Creamy Mashed Potatoes
In our homestead, meatloaf is a favorite comfort food cooked in the kitchen on a cold and blustery winter day. The stove heats the kitchen and the back of the house, then the warm and yummy meal warms our hungry bellies.
My husband and I are not big fans of the old-fashioned tangy ketchup topped meatloaves, so I have reinvented the popular dish many times over. You can find several of my other meatloaves down below. But for this one, I have used another traditional ingredient, condensed tomato soup in the meatloaf mixture but also to make a flavorful gravy. It elevates basic pork and beef meatloaf to a whole other level.
And of course, gravy doesn’t work without its best companion, the mashed potatoes. I use a special ingredient to make these creamy and oh so delicious, a block of cream cheese. Everyone has a special taste to their potatoes so by all means, add extra butter or salt or milk to your taste.

Meatloaf with Tomato Soup Gravy & Creamy Mashed Potatoes

Meatloaf
- 1 lb. ground beef …[$4.00]

Creamy Mashed Potatoes
- 3 lb white potatoes …[$3.00]
- 8 oz cream cheese …[$2.00]

Tomato Gravy
- ½ cup meatloaf pan drippings …[$0]
- 3 Tbsp. all purpose flour …[$0.02]

Instructions
Meatloaf
- Combine all ingredients together in a large bowl by hand or in a stand mixer.
- Press meat mixture in a loaf pan and bake uncovered at 350 °F for 30-40 minutes.
- Take the pan out of the oven and remove ½ cup of pan juices and grease. Put meatloaf back in the oven uncovered with the heat off in order to keep warm.
Creamy Mashed Potatoes
- Peel, wash, and cut potatoes into quarters. Set in a boiling pot of water and cook until potatoes are soft.
- Drain cooked potatoes and add the remaining ingredients. Mash or blend all contents together until a smooth consistency.
Tomato Gravy
- In a medium saucepan, whisk together pan drippings and flour over low heat until a paste is made.
- Add chicken broth and all the tomato soup to the pan and whisk.
- Simmer for 10 minutes. Gravy should thicken. Add more chicken broth if the gravy is too thick. Or cook longer if it is too thin.
- When meatloaf and mashed potatoes are finished, remove from oven and let sit for about 10-15 minutes for easier cutting.
- Let meatloaf set out of the oven for ten minutes before slicing. Pour tomato soup gravy over both meatloaf and mashed potatoes and enjoy.
