One– Pot Taco Pasta Recipe
For some time now, I have been playing around with one-pot pasta dishes. I finally perfected it with my taco pasta meal. Not only is it easier to make, but you have much fewer pots and pans to clean up. This dish only uses one large stockpot or a Dutch oven pan. That’s it. There is no extra pot to boil water in for the pasta. No extra skillet to brown the ground beef.
One-pot taco past meal is easy to make since I use homemade canned salsa that I have made from the summer garden with added homegrown peppers. You can use salsa from the store if you prefer, but I love homemade so much more. I feel it gives the dish a more authentic home-style taste.
The pasta dish is also a fantastic hit with the family and the kiddos. There is something about meals with added pasta that my kids go nuts to eat.
Cost to make this recipe.
The recipe makes a large amount, eight healthy portions. I have calculated the recipe to cost roughly $14.62, but that relates to $1.83 per serving size. I can reduce the cost by growing onions, garlic, peppers, and salsa. My homesteader cost comes closer to $10.44 or $1.31 per serving size.

One Pot Taco Pasta
Ingredients
- 1 lb. ground beef, …[$4.00]
- ½ large onion, chopped small…[$0.50]
- ½ large green bell pepper, chopped…[$0.30]
- 1 tbsp. salt, …[$0.20]
- 1 tbsp. garlic powder, …[$0.17]
- ½ tbsp. ground cumin, …[$0.24]
- sprinkle chili powder, …[$0.01]
- 5 cups water, …[$0]
- 1 lb. rotini pasta, …[$1.00]
- 4 cups salsa, …[$3.20]
- 4 cups Mexican cheese, …[$5.00]
Instructions
- In a large stock pot, brown 1 lb. ground beef with ½ large green bell pepper and ½ large onion. Sprinkle all seasonings (1 tbsp. salt, 1 tbsp. garlic powder, ½ tbsp. ground cumin, sprinkle chili powder) over meat and mix in.
- When meat is completely cooked, add 5 cups water and bring to a boil.
- Add 1 lb. rotini pasta and cook until pasta is soft but not all the way cooked through. There should still be liquid at the bottom of the pot.
- Stir in 4 cups salsa and reduce the heat to low. Cook for a few more minutes, and stir often.
- Serve warm and top with 4 cups Mexican cheese, sour cream, or any of your other taco toppings.
