Pickled Jalapeno Peppers
Recently, I started growing jalapeno peppers in our summer backyard garden because I realized I was going to the store and buying canned jalapeno peppers for different recipes. This pickled jalapeno peppers water bath canning recipe helps preserve my homegrown jalapenos or other pepper varieties for later use.
I love this canning recipe I had found on So Easy to Preserve Home Preservation Book. It is a small batch water bath canning recipe that doesn’t use large loads of peppers either. I can about two half-pints at a which is a perfect amount of peppers from small harvests or small gardens. You can easily double the recipe if you have more.
Canning jalapenos is simple to do and doesn’t take too many steps like in jams or relishes. All you do is chop up clean peppers, using gloves, pack them into clean hot jars, pour boiling vinegar liquid over, and process. It takes little time to process too.

Pickled Jalapeno Peppers

- 1 lb. jalapeno peppers, wash, seeded and chopped…[$1.48]

- 1 tsp pickling salt, …[$0.001]
- 1 tsp. mixed pickling spices, optional
Instructions
- Prep your water bath canning equipment and mason jars with lids and rings.
- Bring vinegar, water, salt, and spices to a boil.
- Tightly pack peppers into hot mason jars leaving a ½ inch headspace.
- Pour boiling liquid over peppers leaving ½ inch headspace.
- Remove bubbles and wipe rim. Place lids and rings on jars and process for 10 minutes in boiling water bath canner.
