
Roasted Beef with Mushrooms & Red Potatoes
A roasted beef tenderloin is accompanied by quartered mushrooms and red or white potatoes. This combination makes for one of the most satisfying family meals. The beef is coated with a flavorful rub of Dijon mustard, cracked black peppercorns, and salt. This rub forms a beautifully seasoned crust. It locks in the juices and enhances the natural richness of the meat. As it roasts, the mushrooms and potatoes cook alongside, soaking up the savory aromas and complementing the tenderloin perfectly. By the time it reaches the table, you have a harmonious plate. Every bite is a celebration of flavor and comfort. The dish includes succulent beef, earthy mushrooms, and tender potatoes.
I love roasting this meal in a deep four-inch porcelain pan with a handle and lid. My pan works great on the stovetop and in the oven up to 450 degrees F. I cook various complete meals in my favorite pan. I make Bavarian stew, apple cider glazed pork tenderloin, and one-pot taco pasta.

Instructions
- In an small bowl blend together Dijon mustard, crushed black pepper, salt, and thyme. Rub mixture over entire beef roast.
- Preheat oven to 425 °F. Set up a oven safe deep skillet and heat oil and mushrooms for 5 minutes.
- Scrap mushrooms to the side and place in beef roast and then red potatoes. Place 2 tbsp. of butter on top of roast and put skillet in oven uncovered.
- Roast for 45-60 minutes. Use a meat thermometer to determine your temperature and how rare you want your meat. We like medium rare which is 130-135 °F.
- When roasted, remove beef and mushrooms from skillet and let meat rest for 10 minutes before slicing.
