Roasted Beef with Mushrooms & Red Potatoes
Roasted beef cooked along with quartered mushrooms and red or white potatoes is one of the best complete family meals you can put together. The Dijon mustard, cracked black peppercorn, and salt rub gives a great flavorful crust around the entire tenderloin. Tagged along with baked mushrooms and potatoes completes this meal.
I love roasting this meal in a deep four-inch porcelain pan with a handle and lid. My pan works great on the stovetop and in the oven up to 450 degrees F. I cook all sorts of complete meals in my favorite pan like Bavarian stew, apple cider glazed pork tenderloin, and one-pot taco pasta.

The majority of the recipes have a low cost that fits nearly every budget. Well, that is except for this one. Because of all the expensive ingredients like beef tenderloin, mushrooms, and cracked black pepper, this recipe cost me roughly $31.70 or $7.93 per serving size.
If you add another cheap veggie on the side, then this complete meal isn’t too expensive when you look at the serving cost. You may also have some roast beef leftover for another dinner recipe.

Instructions
- In an small bowl blend together Dijon mustard, crushed black pepper, salt, and thyme. Rub mixture over entire beef roast.
- Preheat oven to 425 °F. Set up a oven safe deep skillet and heat oil and mushrooms for 5 minutes.
- Scrap mushrooms to the side and place in beef roast and then red potatoes. Place 2 tbsp. of butter on top of roast and put skillet in oven uncovered.
- Roast for 45-60 minutes. Use a meat thermometer to determine your temperature and how rare you want your meat. We like medium rare which is 130-135 °F.
- When roasted, remove beef and mushrooms from skillet and let meat rest for 10 minutes before slicing.
