Roasted Red Pepper Grilled Cheese Sandwich Recipe
I had been in search of some tasty summertime recipes and found a roasted red pepper spread sandwich recipe in my 2006 Cooking Light Cookbook. The original recipe doesn’t include cheese or the aspect of grilling the sandwich. It adds a bit of change to an already great sandwich.
The original recipe is cold and included a half cup of chopped cucumbers, one bottle of chopped roasted red peppers, eight ounces of cream cheese, three tablespoons of minced red onion, romaine lettuce, and bread. This version is a great recipe to use summer garden veggies. It is light and refreshing but quite filling.
But this sandwich would also go great with a bowl of soup in the wintertime. I have this grilled cheese with my garden veggie soup and my cream of asparagus soup.

I calculated this recipe to cost around $9.07 for four sandwiches or $2.27 per serving size. There are a couple of ingredients that we grow here on the homestead. I can save money on the spinach and sweet bell pepper. My homestead costs closer to $5.69 or $1.42 per serving size.

Roasted Red Pepper Spread Sandwiches
Ingredients
- 4 oz. cream cheese, softened…[$1.00]
- 1 tbsp. mayonnaise, …[$0.06]
- 1 whole roasted red pepper, minced…[$0.40]
- ½ large green bell pepper, minced…[$0.35]
- 3 oz. Monterey cheese, shredded…[$1.25]
- 3 oz. cheddar cheese, shredded…[$1.25]
- ½ tsp. garlic powder, …[$0.02]
- 8 slices thick bread, …[$0.48]
- 4 tbsp garlic butter, softened to be spread…[$1.25]
- 4 cups fresh baby spinach, …[$3.00]
Instructions
- In a medium bowl, blend cream cheese, mayo, red pepper, green pepper, garlic powder, salt and pepper until smooth and uniform.
- Fold in shredded cheeses, cover and keep in refrigerator until read to use. Mixture will be thick.
- Spread soft garlic butter on one side of all pieces of bread.
- Grill sandwich with garlic butter side down until golden brown and filled with roasted red pepper mixture and one cup fresh spinach. The spinach will wilt and sandwich will even out.
