Classic beef stroganoff is not only a great hearty wintry entrée but is also super delicious. Our family loves this mid-19th-century Russian classic dish with flavorful beef meatballs covered in a creamy sour cream sauce.
You can make this recipe in a couple of different ways. I have used beef tips or cut up a whole beef roast and cooked it in a slow cooker. For one dinner, I changed it up and made an herbed chicken meatball stroganoff over tender pasta. That one was amazing and worth a try. You can also make this fast and brown up the ground beef in a skillet with butter and add it to the sour cream sauce.
Changing up the meat portion of the stroganoff can give this dish a great twist. But what doesn’t change is the sauce? You will always have a creamy mushroom and sour cream sauce.

I have calculated this exceptionally complete dinner to cost about $13.27 for the entire entrée, or about $3.32 per serving. This cost includes a healthy vegetable side. For us, we use whatever is in the garden, so the price is free.
There aren’t too many ingredients, as a homesteader, that we can reduce the price. We grow and make our onion, garlic powder, and breadcrumbs, but unfortunately, that doesn’t reduce the price too much. Growing your mushrooms can help.

Classic Beef Meatball Stroganoff
Ingredients
Meatballs
- 1 lb ground beef …[$4.00]

- ½ cup breadcrumbs …[$0.15]
- 1 tsp. onion powder …[$0.06]
- 1 tsp garlic powder …[$0.08]
- ½ tsp. salt …[$0.03]

Stroganoff Gravy
- ½ stick butter divided…[$0.50]
- 1 lb fresh mushrooms …[$1.50]
- ½ large onion minced…[$0.20]
- 3 tbsp all purpose flour …[$0.05]
- 2 cup beef broth …[$1.76]
- 1 cup sour cream …[$0.76]
- salt to taste
- 1 lb pasta …[$1.00]
- 3 cups broccoli or any favorite veggie…[$3.00]
Instructions
- Start and cook pasta accordingly. Preheat oven at 350 °F.
- Blend all meatball ingredients until mixture is uniform. Form tablespoon sized meatballs and place them on a cookie sheet or parchment paper.
- Heat a seasoned or oiled skillet that is safe to go into the oven. Brown all meatballs over medium to high heat on all sides. After turning meatballs and browning slightly, place skillet in oven and bake for 15-30 minutes; depending on the size of your meatballs.
- In another nonstick pot, melt 2 tbsp butter and saute mushrooms and onions over medium to high heat.
- Add and melt remaining butter. Whisk in flour to form a paste mixture.
- Add in beef broth and bring to a light boil. Cook gravy until mixture thickens. If it is too thick, then add a little more beef broth.
- Finally, stir in sour cream and bring back to a slight boil. Serve hot meatballs and sour cream gravy over hot pasta and enjoy.
