Garden Vegetable Sloppy Joe Recipe
Summertime gardens always give a plethora of summer squash, yellow and zucchini, well at least in my garden. For me it is about the easiest vegetable to grow. I really don’t do a whole lot of maintenance and I receive baskets of fresh squash at least once a week.
It is a great side dish, maybe sautéed with garlic and butter or grilled with some sea salt. But even that recipe gets boring after about a month of it. I have been trying to come up with more inventive recipes to utilize all that squash. Sloppy Joes are always a favorite with the kiddos but I can not stand the canned sauce. This recipe tastes so much more amazing but still like sloppy Joes with an added boost of vitamins from the vegetables.

Garden Style Sloppy Joes
Ingredients
- 1 lb. ground beef, …[$4.00]
- 2 lb. zucchini, diced…[$0.98]
- 2 lb. yellow squash, diced…[$0.98]
- 1 cup corn, …[$0.50]
- 1 large onion, diced…[$0.50]
- 1 lb. tomatoes, chopped…[$1.20]
- 1 cup water, divided…[$0]
- ½ cup ketchup, …[$0.80]
- ¼ cup brown sugar, …[$0.12]
- 2 Tbsp. apple cider vinegar, …[$0.04]
- 1 Tbsp. chili powder, …[$0.48]
- 1 Tbsp. Worcestershire sauce, …[$0.15]
- ¼ cup all purpose flour, …[$0.06]
- 8 hamburger buns, …[$2.48]
Instructions
- Cut up all the vegetables; yellow squash, zucchini, and onions. Put them into the slow cooker including the corn.
- In a medium saucepan, cook chopped tomatoes over medium heat and add ½ cup water. Cook tomatoes until mixture turns into a tomato sauce. Add tomato sauce to slow cooker.
- In same pot (I like to keep the dirty pots and pans to a minimum) brown ground beef, drain and add to slow cooker.
- Add other ½ cup of water, ketchup, brown sugar, vinegar, Worcestershire sauce, chili powder and flour to slow cooker.
- Set cooker to low and cook for 6 hours. Serve with hamburger buns and enjoy.
