Southwestern Egg Rolls Recipe
The famous chain restaurant, Chili’s, is where I have eaten these yummy egg rolls.
The original recipe is made with grilled chicken instead of ground beef. They are also fried in a flour tortilla instead of using an egg roll wrapper. You are more than welcome to make these little appetizers the original way if you choose. The remaining ingredients are the same except I add much more vegetables than the original.
I also love to fill these egg roll wrappers with more filling than normal. When I make these as a main entree, I fill the wrapper with about three to four tablespoons of filling. So if you fill them will less filling then you will get more than 24 rolls. Judge for yourself the amount of filling for your recipe but most times it is easier to roll the wrappers with less filling.
These egg rolls can either be fried or bake them in the oven for a healthier version.

I calculated this recipe to cost about $10.52 or about $0.45 per serving size. A homesteader can save a few pennies by growing your own peppers, spinach, parsley, and corn. That would typically save me $1.41.

Southwestern Egg Rolls
Ingredients
- 1 lb. ground beef, …[$4.00]
- 1 cup spinach, …[$1.00]
- 1 cup sweet corn, …[$0.50]
- ½ cup onion, minced…[$0.25]
- ½ cup dry black beans, …[$0.45]
- 2 tbsp. red bell pepper, minced…[$0.15]
- 2 tbsp. jalapeno pepper, diced…[$0.16]
- ½ tbsp. parsley, fresh and minced…[$0.10]
- ½ tsp. cumin, …[$0.09]
- ½ tsp. chili powder, …[$0.08]
- ¼ tsp. salt, …[$0.01]
- 1 cup Monterey Jack cheese, shredded…[$1.25]
- 24 egg roll wrappers, …[$2.48]
Instructions
- Soak beans overnight in water. The day of making the egg rolls, I like to put beans and water in a small slow cooker and cook for about 4-6 hours to get real nice and soft.
- Brown the ground beef, drain, and set aside.
- In the same pan, sauté corn, onion, red pepper, and jalapenos for about 10-15 minutes. Add the spinach and stir often until wilted.
- Add black beans, parsley, browned ground beef, and all the seasonings. Cook for another 10 minutes. Add shredded cheese and stir until melted.
- Take off heat and fill egg rolls according to the directions on the package.
- Line the filled and folded egg rolls on to a cookie sheet and freeze for at least 2 hours. Put into a freezer safe Ziploc bag and store in freezer until use.
- To bake, set oven to 375 °F and bake for about 10-20 minutes depending on how large the egg rolls are.
