Instructions
Sweet Potato Oatmeal
- Peel and wash whole sweet potatoes. Chop and boil for 15 minutes in a large pot or until all are soft. Mash potatoes and set aside to let cool off.
- In a large bowl blend together the remaining baked oatmeal ingredients. Stir in cooled mashed sweet potatoes. Pour mixture into greased baking casserole dish.
- Preheat oven to 350 °F and bake uncovered for 40 minutes.
Coconut Syrup
- Combine all ingredients together in a saucepot and bring to a boil. And let simmer for 15 minutes.
- Top syrup on top of warm baked oatmeal and enjoy.

- Top syrup on top of warm baked oatmeal and enjoy.
