Sweet Potato Baked Oatmeal Recipe with Coconut Syrup
Baked oatmeals are a family favorite at this homestead. My sweet potato baked oatmeal is definitely on this list. I absolutely love to make these types of recipes for weeknight dinners to then save the leftovers for the remainder breakfasts. Leftovers reheat wonderfully to make a great breakfast for the kiddos before school. The baked oatmeal also is a filling entree. It will keep the kiddos full at school well into lunchtime.
To make this recipe faster and to use up some side dish leftovers, you can use leftover mashed sweet potatoes from a previous dinner. It is best though to not have too many sugars and butter in the leftovers if used in this baked oatmeal recipe.

Instructions
Sweet Potato Oatmeal
- Peel and wash whole sweet potatoes. Chop and boil for 15 minutes in a large pot or until all are soft. Mash potatoes and set aside to let cool off.
- In a large bowl blend together the remaining baked oatmeal ingredients. Stir in cooled mashed sweet potatoes. Pour mixture into greased baking casserole dish.
- Preheat oven to 350 °F and bake uncovered for 40 minutes.
Coconut Syrup
- Combine all ingredients together in a saucepot and bring to a boil. And let simmer for 15 minutes.
- Top syrup on top of warm baked oatmeal and enjoy.
