Unstuffed Cabbage Roll Stew Recipe
I grew up with traditional Polish Galumpkis or stuffed cabbage rolls. They are just the best wintertime meal. Easy to make and perfect for leftovers. But stuffed cabbage rolls take a long time to make well worth it but are still time consuming. So I made an easier version of unstuffed cabbage roll stew in the slow cooker.
This is the same recipe but in a much quicker fashion as it is made in a slow cooker. So this recipe is perfect for those busy weekdays when you don’t have the time to stand in the kitchen and roll some umpteen cabbage rolls. Unstuffed cabbage rolls are also super fantastic because it doesn’t use too many ingredients and they are ingredients you typically have on hand on any given day.
Unfortunately, the husband has been diagnosed with painful gout so we have had to make some substitutions with many of our recipes. Beef is an extreme no-no for gout patients and that is horrible to my husband who is a meat and potatoes eater. But I have substituted ground turkey for the ground beef and it has not changed the recipe all that much. Turkey is one of those great base meat that takes on the flavors of its sauces.

For an entirely complete dinner meal, you can’t beat $1.43 per serving. If you help yourself to large bowls of this meal, then the cost could be more like $1.90. The meat portion of this recipe makes up the bulk of the cost for this recipe, but it is filling and delicious and so worth it.

Unstuffed Cabbage Roll Stew
Ingredients
- 1 lb. ground beef …[$4.00] SUBSTITUTE GROUND TURKEY FOR GOUT FRIENDLY VARIETY.
- ½ large onion chopped…[$0.50]
- 4 cloves garlic minced…[$0.50]
- 1 tsp. salt …[$0.07]
- ½ tsp. black pepper …[$0.46]
- 2 cups chicken stock …[$0.70]
- 1 package smoked sausage chopped…[$3.00]
- 8 oz. tomato sauce …[$1.48]
- 1 Tbsp. brown sugar …[$0.03]
- 1 tsp. fresh oregano …[$0.12]
- 1 tsp. fresh thyme …[$0.10]
- 1 head green cabbage chopped…[$0.44]
Instructions
- Brown onions, garlic, salt, pepper, and ground beef in a large and deep skillet or pot. Drain fat and add remaining ingredients of chicken stock, chopped smoked sausage, tomato sauce, brown sugar, oregano, and thyme, cabbage.
- Bring mixture to a low boil. Lower temperature to a low-medium heat and cover. Cook for 40-60 minutes or until cabbage is tender. This may take a bit longer depending on how much cabbage is in your pot.
- For a slow cooker: Brown onions, garlic, salt, pepper, and ground beef in a skillet. Drain fat and toss in the slow cooker. Add remaining ingredients and cook on low for 6 hours.
- For a pressure cooker: Brown onions, garlic, salt, pepper, and ground beef in a skillet. Drain fat. Set all in a pressure cooker and set on medium pressure for 10 minutes.
