Veggie Chicken Nuggets Recipe
My girls love fast food, stupidly cheap chicken nuggets. All they are is “ground chicken.” I put that in quotes because the ground chicken is probably really questionable. So I wanted to make my own, knowing exactly what kind of meat I am feeding my children.
Now sometimes I can find the pre-ground chicken in my grocer’s meat section, but often I will need to grind my chicken breast up to make this recipe. If you have raw thigh or leg or wing chicken meat for a cheap bargain then you can surely use that to ground up into nugget meat. I love my KitchenAid Food Grinder Attachment. It helps in a pinch when I can’t find it already in the stores.
My Veggie chicken nuggets are also versatile in any season; as in seasonal veggies to add. When I first made these, it was early spring, and I had carrots and broccoli coming from the garden. They were a great combination. I hope to try zucchini and squash for a summertime nugget. They are a great way to stuff some extra vegetables into your kid’s diets without them hopefully noticing.

Veggie Chicken Nuggets
Ingredients
- 1 lb. ground chicken, …[$4.00]
- 1 cup carrots, finely minced…[$0.25]
- 2 cups broccoli, finely minced…[$2.00]
- 1 cup breadcrumbs, …[$0.29]
- ½ tbsp. onion powder, …[$0.09]
- ½ tbsp. garlic powder, …[$0.24]
- 2 tbsp. powdered sugar, optional…[$0.04]
- 1 tsp. salt, …[$0.07]
- Oil, peanut, canola, or vegetable…[$0.76]
Instructions
- Mince carrots and broccoli and mix together with ground chicken. Cover and place in refrigerator until needed.
- In shallow bowl mix together breadcrumbs, seasonings, powdered sugar, and salt.
- Heat up oil in a small fryer or deep pan. Form each chicken nugget in your hand, coat each in breadcrumb mixture and place to the side. Fry over medium heat in oil until coating is golden brown.
- Remove from heat and place in a colander to drain the excess oil. Serve hot and enjoy.
- TIP: Throw nuggets in casserole dish and put in oven at 200 °F to keep warm until ready to eat.
