Watermelon Lemonade Concentrate Recipe Made for Water Bath Canning
Are you craving some delicious fresh watermelon lemonade in the middle of winter? Well, how about canning freshly squeezed lemon juice, puree watermelon, and added sugar to make watermelon lemonade concentrate? This recipe makes a fantastic concentrate for those moments.
This canning recipe makes about three quarts of concentrate with one cup of leftover for testing and drinking. I have found that the canned liquid will start changing color if left for more than a year. My recommendation is to use the concentrate within six months.
To reconstitute this concentrate add one part water to one part concentrate. I like to add 1.5 parts water to one part concentrate for the kiddos because they don’t like the hard sour taste of most lemonades.

Instructions
- Heat all ingredients in stock pot but do not boil. Heat only to 190 degrees F. This will heat fast so stir often and then remove from heat.
- Prepare water bath canning equipment, mason jars, lids and rings.
- Ladle warm concentrate into hot jars leaving 1/4 inch headspace.
- Remove bubbles, clean rim, and place lids and rings on finger tight.
- Process in water bath canner for 15 minutes.
