In a medium skillet, sauté chopped onions in butter for five minutes and then add garlic being careful not to burn the garlic. Add ¼ cup Marsala wine and let simmer to cook off all alcohol. Take off heat and set aside.
In a large bowl combine remaining ingredients and mix meat mixture thoroughly. Add in sauteed onion mixture.
Press meat into a bread loaf pan. Cover and bake in an oven at 350 °F for 30 minutes. Uncover and bake to brown top of meatloaf for another 10-15 minutes.
Marsala Gravy
In your previous medium skillet, saute sliced mushrooms and onions in 1 tbsp. butter until cooked through.
Melt remaining butter in pan and whisk in all purpose flour to make a paste mixture.
Whisk in Marsala wine and beef stock. Simmer over medium heat, stirring often and until gravy thickens. Salt to taste and add more beef stock if you need thinner gravy.
