Boil water and make elbow pasta accordingly. Drain and set aside for later.
In a large pot, brown chopped onions and chicken sausage with 2 tbsp. butter. When cooked, remove from pot and set aside.
Reduce heat and melt the remaining butter in large pot. Whisk in flour to make a paste and until lumps are gone.
Next whisk in milk, heavy cream, and apple butter. Let mixture heat back up and let thicken. Toss in cheddar cheese to melt and continue to stir. Add salt to taste.
Fold in browned chicken sausage and onions and cooked macaroni. Serve mac and cheese hot.
