In a medium pan, saute bacon for about 2 minutes over medium heat. Add onions and cook until onions are translucent and bacon's fat is rendered. Add mushrooms and seasonings and cook for another 1-2 minutes.
Remove from heat and place in mixing bowl to let cool off. Meanwhile, chop up turkey and apple then add to mixing bowl.
Mix in the remaining ingredients, cover bowl and place in refrigerator for 2-3 hours for flavors to come together.
