Preheat oven to 350 °F. Grease a loaf pan and set aside.
Blend 1 cup white granulated sugar, 2 large eggs, ½ cup canola or vegetable oil, and 1 tbsp vanilla extract together until the mixture is smooth. Add all remaining ingredients (1½ cup all purpose flour, ½ tsp. baking powder, 1 tsp. baking soda, 1½ tsp. ground cinnamon, ½ tsp. Apple pie spice, ½ cup rolled oats, and ¾ cup unsweetened applesauce and blend until mixture is uniform.
Pour mixture into greased loaf pan and bake for 50-60 minutes or until toothpick comes out clean. Let cool and remove from pan.
