Preheat oven at 350 °F. Grease 8 or 9 inch cast iron skillet with vegetable shortening and dust with flour.
Cream together vegetable shortening and sugar. Add vanilla extract, eggs, and heavy cream. Blend together. Add baking powder and flour and blend until smooth.
Pour batter into pre-seasoned cast iron skillet and bake in oven for about 45 minutes or until a toothpick comes out clean.
Take skillet out and let cool down on wire rack for at least 30 minutes.
