Caramelized Pineapple Chicken Quesadillas with Strawberry Pie Salsa
Sweet and savory chicken and caramelized pineapple quesadillas served with this unique homemade strawberry pie salsa that is spiced up with jalapeno pepper.
Combine all ingredients, except cilantro, in small bowl. Cover and refrigerate for at least 4 hours.
Serve on top of baked quesadillas.
Quesadillas
Brown chicken in large skillet and set aside.
Take pan off heat and melt butter. Add onions and sauté for about 1-2 minutes. Add pineapple.
Cover and let cook for about 30 minutes. Stir occasionally to make sure nothing burns.
Preheat oven to 325 °F.
Add chicken and sautéed pineapple/onion mixture to half of each flour tortillas along with shredded cheese.
Fold each tortilla on top of itself and bake for about 10-15 minutes or until all cheese has melted and flour tortilla is browned and crispy. If you need a crispier tortilla, broil for a minute or two.
