Peel and wash 2 medium sweet potatoes. Chop and boil for 15 minutes in a large pot or until all are soft. Mash potatoes and set aside to let cool off.
In a large bowl, blend the remaining baked oatmeal ingredients (2 cups coconut milk, 2 large eggs, ¼ cup brown sugar, 1 tsp vanilla extract, 1 tsp ground cinnamon, 1 tsp Pumpkin pie spice, 3 cups rolled oats. Stir in cooled mashed sweet potatoes. Pour mixture into greased baking casserole dish.
Preheat oven to 350 °F and bake uncovered for 40 minutes.
Coconut Syrup
Combine syrup ingredients (1 cup coconut milk, ¼ cup brown sugar, ¼ cup white granulated sugar, ½ cup sweetened shredded coconut) in a saucepot and bring to a boil. And let simmer for 15 minutes.
