Combine all ingredients together in a large bowl by hand or in a stand mixer.
Press meat mixture in a loaf pan and bake uncovered at 350 °F for 30-40 minutes.
Take the pan out of the oven and remove ½ cup of pan juices and grease. Put meatloaf back in the oven uncovered with the heat off in order to keep warm.
Creamy Mashed Potatoes
Peel, wash, and cut potatoes into quarters. Set in a boiling pot of water and cook until potatoes are soft.
Drain cooked potatoes and add the remaining ingredients. Mash or blend all contents together until a smooth consistency.
Tomato Gravy
In a medium saucepan, whisk together pan drippings and flour over low heat until a paste is made.
Add chicken broth and all the tomato soup to the pan and whisk.
Simmer for 10 minutes. Gravy should thicken. Add more chicken broth if the gravy is too thick. Or cook longer if it is too thin.
When meatloaf and mashed potatoes are finished, remove from oven and let sit for about 10-15 minutes for easier cutting.
Let meatloaf set out of the oven for ten minutes before slicing. Pour tomato soup gravy over both meatloaf and mashed potatoes and enjoy.
