Chop green cabbage, broccoli, and dry Ramen noodles. Shred carrots.
Toss veggies and Ramen together in a large bowl. Add a second package of Ramen noodles if you like it more crunchier.
In a bowl, combine Ramen flavor packet, oil, vinegar, sugar, and soy sauce together. Mix until all of the sugar is dissolved and pour over chopped coleslaw.
