Preheat oven to 350 °F and grease an 8x8 casserole dish.
Mix together everything (½ cup coconut oil, ½ cup brown sugar, ½ cup white granulated sugar, 3 large bananas, 4 large eggs, 1 cup milk, 2 tbsp ground flaxseed, 2 tsp ground cinnamon, 2 tsp baking powder, 1 tsp vanilla extract, 1 tsp almond extract except for rolled oats and almond slices.
Fold in7 cups rolled oats and ½ cup almond slices and press into casserole dish. Bake for 40 minutes uncovered. Let oatmeal sit for 5 minutes before serving.
