Combine 1 ¼ cup all purpose flour, 1 Tbsp. white granulated sugar, and ¼ tsp. salt together. Then blend in cold ½ stick butter and cold ¼ cup vegetable shortening along with 2 Tbsp. ice water.
Fold dough in plastic and set in refrigerator until ready to use or at least 30 minutes.
Roll dough and press in a 9" pie plate.
Apple Butter Filling
Beat together 2 large eggs with ½ cup white granulated sugar. Then add 2 Tbsp. corn starch, 1 tsp Apple pie spice, ½ cup apple butter, and 2 cups milk.
Pour filling into unbaked pie crust. The amount will be very loose and it will reach to the top of the pie. Be careful when placing in the oven.
Bake at 375°F for about 60 minutes or until the center has set and gives a slight jiggle. Be sure to cover the crust edges if they become too brown before the rest of the pie has time to bake.
Let the pie cool before cutting in and serving. Keep in refrigerator.
