Prepare sourdough starter the night before by mixing 1 cup unfed sourdough starter with 1 cup unbleached all purpose flour in a medium bowl. Cover and let rest overnight or for at least 4 hours. Starter should start to feed and bubbles form on top.
Mix in 1 tsp Apple pie spice, ½ tsp baking soda, and ½ tsp salt to batter. Batter should resemble pancake batter, running.
Dice clean 2 medium apples and fold into batter. You can peel apples first if you wish but it is unnecessary. Batter should be chock full of apples and become hard to stir.
Heat 1-2 cups coconut oil in a shallow pan over medium heat. I start with 1 cup of oil and add more if needed throughout the process.
Drop ⅕ cup sized dollops of apple batter into hot oil and let fry on each side for a minute or so until each side is golden brown. Nudge dollops slightly once it begins to fry to ensure they are not sticking to the bottom of pan.
Set aside on a rack and let cool completely.
Stir together ½ cup powdered sugar ,¼ tsp vanilla extract, and ½ tbsp milk until desired consistency is achieved and drizzle on top cooled apple fritters. Serve and enjoy.
